Broccoli and Avocado Soup

Creamy, refreshing and so easy to prepare, the Broccoli and Avocado Soup is packed with vitamins, minerals and antioxidants. It will be your new favourite soup.


  • 1/2 tablespoon extra virgin olive oil - زيت الزيتون بكر
  • 1 medium red onion (chopped) - بصلة حمراء
  • 2 large garlic cloves - فصوص ثوم
  • 1 teaspoon fresh ginger (grated) - جنزبيل
  • 300 gram broccoli (about 1 medium head) - بروكلى
  • 1 pinch ground cardamom - حبهان مطحون
  • 3 cup water (or stock) - ماء
  • 1 large avocado (ripe) - أفوكادو
  • salt and pepper (to taste) - ملح و فلفل

Step by step

  1. Heat olive oil in a soup pot. Add onions and sauté on medium heat until soft.
  2. Add garlic and ginger and sauté for another minute.
  3. Add broccoli florets and stir for another minute.
  4. Season with salt, pepper and ground cardamom.
  5. Add hot water to cover.
  6. Cover the soup pot, and leave the broccoli to simmer on low heat until soft.
  7. Turn off the heat. Add the avocado and use a handheld blender to blend the soup until smooth and creamy. Add more stock or water if needed to thin out the soup and adjust seasoning.
  8. Serve warm
