Chocolate Peanut Butter Rice Cakes

Talk about a pick me up snack or a breakfast cookie that keeps you full and satisfies your sugar tooth, this chocolate peanut butter rice cake is what you mean!

Crispy, with a creamy naturally sweetened center (banana-sweetened!) and a chocolate cover with a sprinkle of sea salt…delicious and comforting is an understatement.





  • 1 large banana - موز
  • 2 tablespoon peanut butter (unsweetened) - زبدة الفول السوداني
  • 10 Rice Cakes
  • 2 tablespoon chia seeds (OR flaxseeds or pumpkin seeds) - OPTIONAL
  • 100 gram dark chocolate - شوكولاتة غامقة
  • 2 teaspoon coconut oil - زيت جوز الهند
  • sea salt - ملح البحر

Step by step

  1. Slice and mash the banana in a medium bowl. Add the peanut butter and mix.
  2. Use a butter knife to smear peanut butter banana mix over one rice cake side, sprinkle seeds, if using any, and cover it with another rice cake like a sandwich. Repeat until you have 5 rice cake sandwiches.
  3. In the meantime, melt the chocolate by adding the coconut oil to it and placing it in the microwave or over a pot with boiling water for a couple of minutes.
  4. Stir the chocolate to combine and dip each rice cake sandwich to cover the sides. Sprinkle some sea salt on it.
  5. Place the sandwiches in the freezer for at least 30 minutes. You can keep it there or move it to the fridge after. Indulge when the urge comes!
