Arugula Eggplant Salad

Here’s what I love about this arugula eggplant salad: it looks and tastes fancy, yet doesn’t include any sophisticated ingredients. Not only does my family enjoy it at home, but also our friends love it when I serve it at dinner parties. It is so simple, yet different and impressive!


  • 1 kg eggplant (about 2 big eggplants) - باذنجان رومي
  • 2 bunch arugula - جرجير
  • 3 medium cucumber - خيار
  • 3 tomatoes - طماطم
  • 1 drizzle olive oil - زيت زيتون
  • 2 garlic clove (minced) - فص ثوم
  • salt and pepper - ملح و فلفل
  • 2 lime - ليمون بلدي
  • salt and pepper - ملح و فلفل
  • 1 drizzle pomegranate molasses - دبس رمان

Step by step

  1. Cut the eggplants into bite-size cubes and rub them with a drizzle olive oil, 2 crushed garlic cloves, salt and pepper. Spread the aubergine cubes on an oven tray and roast for 20 minutes at 180C.
  2. To prepare the salad, cut the cucumber and tomatoes into cubes and mix them with the arugula leaves.
  3. Dress the salad with lime juice, salt and pepper and toss together.
  4. Finally add the cooled roasted eggplants cubes on top and drizzle the salad with a little pomegranate molasses and serve!
