Chocolate Peanut Butter Rice Cakes

Talk about a pick me up snack or a breakfast cookie that keeps you full and satisfies your sugar tooth, this chocolate peanut butter rice cake is what you mean!
Crispy, with a creamy naturally sweetened center (banana-sweetened!) and a chocolate cover with a sprinkle of sea salt…delicious and comforting is an understatement.
Ingredients
- 1 large banana - موز
- 2 tablespoon peanut butter (unsweetened) - زبدة الفول السوداني
- 10 Rice Cakes
- 2 tablespoon chia seeds (OR flaxseeds or pumpkin seeds) - OPTIONAL
- 100 gram dark chocolate - شوكولاتة غامقة
- 2 teaspoon coconut oil - زيت جوز الهند
- sea salt - ملح البحر
Step by step
- Slice and mash the banana in a medium bowl. Add the peanut butter and mix.
- Use a butter knife to smear peanut butter banana mix over one rice cake side, sprinkle seeds, if using any, and cover it with another rice cake like a sandwich. Repeat until you have 5 rice cake sandwiches.
- In the meantime, melt the chocolate by adding the coconut oil to it and placing it in the microwave or over a pot with boiling water for a couple of minutes.
- Stir the chocolate to combine and dip each rice cake sandwich to cover the sides. Sprinkle some sea salt on it.
- Place the sandwiches in the freezer for at least 30 minutes. You can keep it there or move it to the fridge after. Indulge when the urge comes!
