Homemade Roast Beef Toasties

The key to preparing these healthy kid-friendly lunchbox toasties, is to use a cucumber peeler to slice thin strips of carrots and cucumbers… The rest is easy. Add layers of your favourite cheese, roast beef, thinly sliced veggies and a favourite dressing such as mustard.

Step by step
- Use the vegetable peeler to create thin shaves of carrots and cucumber.
- Spread the toast with a little mustard. Add layers of cheese, roast beef, carrot and cucumber shaves. Add a second slice of toast on top.
- Optional: Cut the toast sides, and divide the toast into four equal squares.
